Sante Fe Shrimp Salad for a Great Lenten Meal

This is a great recipe for a shrimp salad Sante Fe style. It’s perfect for any time of the year but for Lent it can’t be beat. Simple to make.
Ingredients

1 package (12 oz) Seapak® Shrimp Scampi – Butter and Garlic, frozen1/2 can black beans, rinsed and drained

1/2 can corn

2 Tablespoons fresh cilantro, chopped

1 medium tomato, diced

1 head of lettuce, chopped

corn chips (optional)

salsa and ranch dressing, as desired
Directions

PREPARE shrimp according to package directions.

LIFT shrimp from butter sauce (discard butter sauce if desired) and transfer shrimp to a large bowl.

ADD beans, corn, tomato and cilantro.

STIR to combine and season to taste with salt and pepper.

ARRANGE shrimp mixture on lettuce and garnish with corn chips.

SERVE with salsa and ranch dressing (optional). Use extra garlic butter from shrimp to make garlic toast, if desired.

Garlicky Shrimp Scampi from William Sonoma


In Italy, scampi are shrimplike crustaceans known elsewhere as Dublin Bay prawns or langoustines. American cooks use the same term to describe sautéed jumbo shrimp in a buttery, white wine sauce. This version is more garlicky and saucy than most, and is delicious served over pasta, rice, or even grits.

Jumbo or extra-large shrimp, 11⁄2 pounds
All-purpose flour, 1⁄2 cup
Fine sea salt and freshly ground pepper
Olive oil, 2 tablespoons, plus more as needed
Unsalted butter, 12 tablespoons
Garlic, 3 cloves, minced
Dry white wine, 1⁄4 cup
Finely grated lemon zest, from 1 lemon
Fresh lemon juice, 2 tablespoons
Fresh flat-leaf parsley, 2 tablespoons finely chopped
Lemon wedges for serving
Makes 4 servings

Peel and devein the shrimp, leaving the tail segment intact. In a shallow bowl, stir together the flour, 1⁄2 teaspoon salt, and 1⁄4 teaspoon pepper.

Yummy Carrot Ginger Soup Recipe

If you are looking to make a really yummy and healthy soup, try this easy recipe for Carrot Ginger soup.

Ingredients:

* 6 organic carrots
* 1 medium organic onion
* 2 teaspoons extra virgin olive oil
* 1 teaspoon sea salt
* 6 inch piece fresh ginger Parsley to garnish

Directions:

-Wash, peel, and cut carrots and onion into chunks.

-Saute vegetables in a skillet with olive oil.

-Place vegetables and salt in a pot.

-Add 4 cups water.

-Bring to a boil.

-Cover with a lid.

-Simmer on low heat for 25 minutes.

-Transfer soup into blender, adding water to achieve desired consistency.

-When blending is done, squeeze juice from grated ginger and add to soup.

Easy Sandtart Cookie Recipe Is Our Favorite Christmas Cookie Tradition

Ever since I was a little girl, we have been making sandtarts for the Christmas holidays. This is such a tradition that it just wouldn't seem like Christmas without sandtarts. In case you aren't familiar with this cookie, it is one of the easiest recipes for cookies with only 4 ingredients. It is actually the only cookie recipe I can remember off the top of my head. These are cut out cookies so you will need cookie cutters.

Ingredients:

1 cup of Butter

2 cups of Sugar

3 Eggs

4 cups of Flour

Cream butter and sugar. Add in 1 egg at a time and mix well. Slowly add in 1 cup of flour at a time. Instructions say to chill dough for a few hours, but I have to be truthful ... we always just go with the dough right away and start rolling it out. You will need to roll dough onto a "well floured" cloth or board. We just use a pillowcase, which works well. Be sure to flour each time between rollings.

Yummy Pumpkin Bread for Thanksgiving Turkey Dinner

The first time I tried Pumpkin bread was when a neighbor of mine, from South Carolina, made it for Thanksgiving. My family fell in love with this moist, delicious bread. Having grown up in the North, I had not even heard of it or imagined anyone using pumpkin for making bread. but ever since then, we have had pumpkin bread at Thanksgiving and it is always a favorite with company. And ... it's easy to make!

Ingredients:

2/3 cup Oil

2/3 cup Brown Sugar

4 Eggs

1 lb. (2 cups) Canned Pumpkin

2/3 cup Water

Cream above ingredients and set aside while mixing remaining ingredients.

3 1/3 cups Flour

2 tsp Baking Soda

1 1/2 tsp Salt

1/2 tsp Baking Powder

1 tsp Cinnamon

1/2 tsp Cloves

1/2 tsp Nutmeg

1/2 tsp Ginger

Optional add-ins - (which I myself don't use)

2/3 cup chopped nuts

2/3 cup raisins

Mix all ingredients together well and then pour into greased/floured pans. Bake at 350 degrees.

2 loaf pans - 70 minutes or until done

Coconut Macaroons - Yummy Healthy Simple Recipe

Coconut. It's not only tasty but new research indicates that the essential oils in coconut may have an anti-viral effect. COCONUT MACAROONS
2 Cups Shredded Unsweetened Coconut
1/4 Cup Flour
Pinch of Salt
2/3 Cup Sweetened Condensed Milk
1 Tsp Vanilla

Mix Flour and Coconut.Add salt, condensed milk and vanilla. Mix well. Drop rounded teaspoon sized balls onto a greased pan. Bake at 325 degrees for 20 -25 minutes. Tops will be golden brown.

Banana Muffins with Cinnamon-Hazelnut Topping- Tasty Muffins that are Healthy & Low Fat

This recipe was created from a Banana Muffin/Bread Recipe that was handed down and then revised to make it a healthier version of classic banana muffins. This recipe tastes as good as the original with half the fat, less sugar and healthier flour.

If you add the topping to the muffins you take a old favorite and make it a muffin worthy of a special occasion. the topping is amazing on these muffins. Who can resist a light sugar, cinnamon and hazelnut topping? It is sinful, but it is done in a way that only adds a little sugar, but Big Flavor.

Pre-Heat Oven to 350

Ingredients:

3/4 Cup Brown Sugar
1/4 Cup Butter, Softened
2 Eggs
1/4 Cup Plain Yogurt or Applesauce
1 Teaspoon Vanilla
3 Bananas, Mashed
1 1/2 Cup White Wheat Flour (or Whole Wheat Flour)
1 Teaspoon Baking Soda
1/2 Teaspoon Salt

Topping- Optional

2-3 Tablespoons Brown Sugar
1/4 Cup Chopped Hazelnuts
1 Teaspoon Cinnamon

Kale, White Bean and Tomato Soup- Healthy, Low-fat and Delicious Soup

Are you looking for a tasty, healthy meal that is filling and low in calories? This soup is perfect for lunch or dinner. Whether you want a healthy option or you are dieting, this soup fits the bill.

Even my kids eat this soup!

Ingredients:
1 tsp Olive Oil
1-2 Minced Garlic Cloves
32 oz Chicken Broth (for vegetarian use vegetable broth)
1 Cup Water
4 Cups Diced Kale (remove stems)
1 15oz Can Diced Tomatoes- Drained
1 15 oz Cans White Cannelloni Beans (or other white beans) in liquid
1/4 tsp Salt
1/2 tsp Pepper
1/2 tsp Oregano
1/2 tsp Basil


Put Olive Oil in pot. Add minced garlic and saute lightly over medium heat. Add Broth, Water, Kale, and Tomatoes to pot. Add spices and stir. Simmer over Medium Heat until Kale is cooked (approx. 45 minutes), stirring occasionally.
Add Beans and cook over Medium low heat for an additional 15-30 minutes.

To Make:

Cut up bananas and/or strawberries (or other fruit) into slices

When I have time, I enjoy making food for my family. Whether making muffins, cookies or dinner, I try to find a healthy version of what I want to make or I try creating my own versions until I find a version I love.


I have tried tons of light, low-fat, or healthy cookie recipes and although some have been very good, often they have required ingredients I do not have on hand, they have a long list of ingredients, or they do not turn out as well as I would like.


After testing many cookie recipes I have come up with a Light Cookie Dough Recipe.

It is the perfect base for making a variety of different kinds of cookies with 1 simple recipe. Just add one or two additional ingredients to the base to make Chocolate Chip Cookies, Peanut Butter Cookies, or Chocolate Cookies, or even make some Cranberry White Chocolate Walnut Cookies.
